Housed at 401 South Blvd, Pieritz Bros. was a place where the creak of the wooden floors and the neatly ordered shelves were as familiar as the friendly faces behind the counter. Sara is a distinguished pastry chef celebrated for her refined techniques & extensive culinary expertise. A graduate of The French Pastry School & holding a degree in Food and Nutrition, she combines scientific knowledge with an artistic approach to pastry. With experience leading production, managing teams, & creating exceptional pastry programs in Oak Park and Chicago, Sara brings precision, creativity, & a modern perspective to every viennoiserie, croissant, and pastry at three fold. a bakery.
Dimitri is a World Pastry Champion whose career reflects passion, artistry, & leadership in French pastry. Beginning his training in France at a young age, he went on to lead pastry programs in some of the world’s most prestigious hotels, award-winning pâtisseries, & international chocolate academies. With decades of experience crafting artisanal croissants, viennoiserie, & fine pastries, Dimitri brings a lifelong dedication to quality, tradition, & innovation to three fold. a bakery
